Spanish Rice and Chicken

I recently bought a new MACHINE, a digital pressure cooker!!! This is a 3-in-1... pressure cooker, slow cooker and steamer. When I first pulled it out of the box, I got that overwhelming feeling like what have I got myself into. I was kinda scared to try it out. Let me tell you what my new machine can do... It will cook a 3-4 lb. whole chicken in 15 minutes. Beans, anywhere from 4-14 minutes, depending on the kind. An artichoke 9 to 11 minutes... just to name a few! I am so excited to figure this thing out and make some yummy meals!!!
This was the first meal I made. Doesn't this chicken look to die for!! They were frozen. I put them in on the BROWN mode for about 20 minutes with some oil. I had to turn them over. It was amazing to watch them cook!

Removed the chicken and browned some uncooked rice for a couple minutes and then added: tomato sauce, diced tomatoes, onions, green peppers, frozen corn (Schwann's... it's the best), salt, and lime juice. Mixed it all together and then added the chicken back in. Put the pressure cooker lid on and cooked on HIGH for 15 minutes.
Waa laa! It wasn't the best TASTING meal... it needed more spices, but it was fun to make and I only used one pan! Easy clean-up! It think it was actually better as left-overs cuz it had time to settle.

Well my word! It looks heavenly! Where did you get your digtal pressure cooker? I have never heard such a thing. I think this one would be easier to use than a one you put on the stove.
